The restaurant

From a coffee shop to a full service restaurant, bar and cafe

We love coffee and full service cafes such as what we, the owners of Aperitivo, experienced while traveling through Europe and Asia.

That is the room we set out to build on Spine Road. Breakfast items in the morning, a full dinner menu at night, and a bar running alongside both. Our mission is to elevate our customers' experience from a traditional coffee shop to a full service restaurant, bar, and cafe.

The bar

Bitters, infusions and syrups made in house

Our trained bartenders, like our chefs, are classically trained.

Lead bartender Tyler graduated from Auguste Escoffier in Boulder, Colorado, and uses his skills to create bitters, alcohol infusions, syrups, and cocktails. New cocktail specials go up often.

Behind the bar are spirits and wines from all over the world, including exclusive mezcal only found in Oaxaca, Mexico, Chef Miguel's hometown, and local handcrafted beer.

Indoor and patio dining

The terrace runs the length of the building, with umbrellas and heaters through the shoulder seasons and clear dome igloos once it turns cold. Walk up, or call ahead and we will put you outside.

Who is in the building

  • Miguel Vazquez

    Owner and Executive Chef

    Graduate of Le Cordon Bleu Culinary Institute in Las Vegas. He worked for many years as a chef at the JW Marriott Hotel, Caesars Palace, the Cosmopolitan Hotel, and Top of The World at the Stratosphere. He brings that experience, and his travels, to a menu inspired by Latin, Asian, Western and European cuisines.

  • Joseph Zeigler

    Owner and General Manager

    A hospitality manager of more than ten years with vast experience in guest satisfaction and community. His focus is building a relationship between the restaurant and the neighborhood around it.

  • Tyler Goddard

    Bar Manager

    Graduate of the Auguste Escoffier School of Culinary Arts. He incorporates his knowledge from the culinary field to create high end cocktails, and the wine and beer selections that pair with the menu.
